All ingredients are readily available in or around BBS Mall, the market by the Phase 4 shops or most like any other lovely outdoor market around Botswana and Africa
Ingredients:
1 large or 2 medium onions
1 large or 2 medium green peppers
1 cob of roasted millies
3 medium tomatoes
1 to 3 chillies (depending on heat and taste)
1/4 cup of lemon juice
1 tablespoon of vinegar
Salt and Pepper
Here is how the shopping broke down for me:
- Ladies at BBS: onions, green pepper, tomatoes and chillies
- Guy at the corner: roasted millies.
- Quick Shop: lemon juice, salt, pepper.
Technique:
1. combine lemon juice and S&P in a bowl - allow to rest.
2. Dice tomatoes - place them in a separate bowl and mix with a pinch of salt - set aside to allow liquid to drain from the tomatoes.
3. Chop chillies and slice roasted millies off cobb - add to lemon mixture. Allow to rest for 5-10 mins.
4. Chop onions and peppers - crush them slightly until they are a lumpy paste. Add to lemon mixture.
5. Drain excess liquid from the tomatoes and add to the mixture.
6. Season to taste by adding more lemon juice, s&p or chillies.
7. Allow to rest for 30 mins for flavors to meld - enjoy!
(Note: Garlic and fresh herbs (coriander) are also welcome when available.)
Can be stored in frig for 2 weeks.
Use to: spice up anything.
Great on eggs, at a braai as an alternative to chakalaka, or just with pap for a quick spicy snack.
